Have you ever taken a bite of a freshly baked cherry pie and wondered why it feels so comforting? The combination of a flaky crust and juicy cherry filling creates a dessert that is both simple and satisfying.
Today, we are going to make a homemade cherry pie that is packed with bright cherry flavor and a beautifully golden lattice crust.
The best part is that this recipe can be prepared ahead of time. We can make the dough and filling a day or two before baking, making dessert preparation much easier. Whether we use frozen cherries or freshly prepared ones, this pie is a wonderful treat for family gatherings, weekend baking projects, or simply enjoying a sweet moment at home.

What Makes This Cherry Pie Special?

This cherry pie combines sweet and tangy cherries with warm spices such as cinnamon and ginger. The filling becomes thick, glossy, and rich in flavor, while the crust bakes into delicate, crisp layers.
The lattice design on top is not only attractive but also allows steam to escape while baking. This helps the filling achieve the perfect texture without becoming overly runny.
Each slice offers a balance of fruity sweetness, gentle spice, and buttery pastry, creating a dessert that feels homemade in the best possible way.

Ingredients We Need

For the filling:
- 2 pounds (900 g) frozen pitted sour cherries, thawed
- 1/4 cup cornstarch
- 1/4 cup water
- 3/4 cup cane sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon almond extract
- A small pinch of salt
For the crust:
- 1 recipe double pie crust dough, chilled for at least 2 hours
- 1 large egg
- 1 tablespoon water
- Coarse sugar for topping (optional)
For serving:
- Vanilla ice cream

Step 1: Prepare the Cherry Filling

1. Place the thawed cherries in a strainer positioned over a bowl. Allow the extra juice to drain naturally.
2. Measure 1 cup (240 ml) of the collected cherry juice and set it aside. Transfer the cherries into a large mixing bowl.
3. In a small bowl, combine:
- 1/4 cup cornstarch
- 1/4 cup water
4. Whisk until smooth and free of lumps.
5. Pour the measured cherry juice into a small saucepan. Bring it to a gentle boil over medium heat.
6. Add:
- 3/4 cup cane sugar
- Stir until fully dissolved.
7. Next, slowly pour in the cornstarch mixture while stirring continuously. Continue cooking for 2 to 3 minutes until the liquid becomes thick, clear, and glossy.
8. Remove from heat and pour this mixture over the cherries.
9. Add:
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon almond extract
- A pinch of salt
10. Mix thoroughly until all cherries are coated. Leave the filling to cool completely.

Step 2: Prepare the Bottom Crust

1. Roll out half of the chilled pie dough on a lightly floured surface.
2. Carefully transfer it into a 9-inch or 9.5-inch pie dish. Leave about 1/2 inch of dough hanging over the edge.
3. Cover loosely and place it in the refrigerator for 30 minutes.
4. Meanwhile, position an oven rack in the lower third of the oven. Place a baking sheet on the rack and preheat the oven to 425°F (220°C).
5. The hot baking sheet helps create a crisp bottom crust.

Step 3: Create the Lattice Top

1. Roll out the remaining dough into a large circle.
2. Transfer it onto a baking tray lined with baking paper.
3. Place it in the refrigerator while the bottom crust chills.
4. After 30 minutes, remove the dough and cut it into strips approximately 1 inch wide using a pizza cutter or pastry wheel.
5. These strips will form the decorative lattice pattern.

Step 4: Assemble the Pie

1. In a small bowl, whisk together:
- 1 large egg
- 1 tablespoon water
2. This creates an egg wash that helps the crust develop a beautiful golden color.
3. Remove the pie shell from the refrigerator.
4. Pour in the completely cooled cherry filling and spread it evenly.
5. Lay 4 to 5 dough strips across the pie in one direction.
6. Then weave another 4 to 5 strips across the first layer, creating a classic lattice pattern.
7. Trim any excess dough around the edges.
8. Fold the overhanging bottom crust upward and over the ends of the lattice strips.
9. Press gently with your fingers or a fork to seal the edges securely.
10. Brush the entire top with egg wash.
11. If desired, sprinkle coarse sugar across the lattice for extra texture and sparkle.

Step 5: Bake Until Golden and Bubbly

1. Place the pie directly onto the preheated baking sheet.
2. Bake at 425°F (220°C) for 20 minutes.
3. Then reduce the temperature to 375°F (190°C).
4. Continue baking for 40 to 50 minutes.
5. The pie is ready when:
- The crust is deep golden brown.
- The filling bubbles steadily through the lattice openings.
- The center looks thick and glossy.
6. If the edges begin browning too quickly, cover them loosely with foil and continue baking.

Step 6: Cool Before Serving

1. This step requires patience.
2. Place the baked pie on a cooling rack and allow it to cool completely for about 4 hours.
3. Cooling helps the filling set properly, making clean slices much easier to achieve.
4. Cut into generous portions and serve with a scoop of vanilla ice cream for a delicious finishing touch.

Helpful Baking Tips

- If you do not collect a full cup of cherry juice, gently warm the cherries in the microwave for about 15 seconds. This helps release additional juice. Repeat if necessary until enough liquid is available.
- For even better flavor, prepare the filling one day ahead and store it in the refrigerator. This allows the spices and cherries to blend beautifully.
- Chilling the dough before baking also helps create flaky layers and maintain the lattice shape.

A Sweet Ending for Every Baker

Lykkers, homemade cherry pie is one of those desserts that brings warmth and happiness to any table. From the glossy cherry filling to the crisp lattice crust, every step contributes to a rewarding baking experience.
